Mizuna

Description

Highly prized for its crisp, succulent stems and deeply serrated, feathery green or purple leaves, mizuna possesses a mildly peppery and slightly sweet flavor. It carries a subtle kick similar to arugula or mustard greens, but is significantly milder and less bitter, making it highly versatile. Excellent in salads. In Japan, it is traditionally tossed into hot pot dishes or soups at the very end of cooking so it retains some crunch. Stalks can be pickled.
